Two New Books
July 19th, 2008 · No Comments
We ordered a few new books to add to our collection recently. They are books that have been in circulation for some time and received good reviews at Amazon. We like BBQ books with stories and the recipes behind the stories. And a couple of tips along the way never hurts either. These two books certainly have both with one leaning way towards the recipe side.
Paul Kirk’s Championship Barbecue has more recipes than anything else. There are tips and short stories but mostly this is a pure recipe book with tons of sauces, rubs, side dishes, etc. There’s also a nice packing list for a competition if that’s your thing. I found the story behind his start to the BBQ championship circuit interesting. It just goes to show you can make championship caliber BBQ without fancy equipment.
On the surface there’s nothing new in Kirk’s book for the avid BBQ enthusiast. The basics behind different woods, styles, and cookers are there. This is an experimentation book. There are tons of different rub recipes and sauces, and the use of various types of ingedients is intriguing. For instance I had never heard of Tellicherry Peppercorns. There’s big flavor in them there tellicherries.
The second book is Peace, Love, and Barbecue. This book is right on target with stories behind the recipes and characters from some of the hottest and most pure BBQ places in the land. We were excited to see Big Bob Gibson’s from Decatur, Alabama featured in the book. If you haven’t tried the white sauce on chicken make it fresh from the recipe in the book. It works nice as a marinade too!
Peace, Love, and Barbecue is the real deal. The writing does a great job at providing glimpses into the the culture and the passion behind perfecting this style of cuisine. There’s plenty of recipes too. But the great thing is that the recipes come straight from the sources. You’ll find that it doesn’t taste the same coming from your smoker but its awfully close and the tips on technique are priceless!
